We finally received our first batch of "heritage" dawgs, and we're ready to introduce them Saturday at the Cherry Street market. Our plans to offer sausage biscuits was nixed by the health dept because only pre-cooked meat is allowed to be served from a mobile pushcart.
There are two things that separate our dawgs from the conventional fair you buy at the grocery store. First, our dawgs are made exclusively from prime shoulder and ham cuts. There are no chicken parts, beef parts, or fillers (and who knows what parts or fillers are being used) in our product. Second, our dawgs are made from rare breed pork, thus the "heritage" label, and are as rare a product as the pigs we use are rare as a breed:
We're going to bring around 160 hot and brat dawgs to serve, and we'll offer them steamed (Chicago style) or griddled, and we'll have steamed buns as well. Condiments will include grated cheese and chopped onion from Downing Family Farm, and mustard, ketchup, relish, etc, so you can fix em how you want em. We wanted to offer chili, but the health dept nixed that as well. If you'd like to see other condiments let us know, and we'll run it by the health dept to see if it's permissible.
We'll also have a limited quantity to sell from our booth. They come in 7 or 8 dawg packages, so if you want some to take home you might want to plan an early visit to the market. Thanks for reading, and we'll see you tomorrow!
